Veggie Toss & Sauce
High Protein with Zero Waste


If you’re in your busy mom era and staring at random veggies in your fridge… this is your sign to throw them ALL in a pan and call it dinner! 
This creamy mixed veggie recipe is my go-to when I don’t want to waste food but still want something nutritious, filling, and actually tastes good.  The secret? Blend cottage cheese + milk for a high-protein, creamy sauce that feels indulgent but is secretly healthy. Trust me, you’ll love it!

INGREDIENTS:

Any veggies you have (broccoli, carrots, zucchini, spinach, peppers… literally anything)
Block of feta cheese
½–1 cup cottage cheese with equal part of milk blended
Garlic, salt, pepper (and whatever seasonings you love)
Optional: pasta, rice, or shredded chicken to bulk it up

DIRECTIONS:

Sauté your veggies until tender. Add in seasonings of choice. Then add your block of feta cheese, place lid on pan until melted. This won’t take long and you can check every couple of minutes and help break the block apart so it will melt quicker. While your cheese is melting; blend cottage cheese and milk until smooth. Once the cheese is soft and melting, pour over veggies. Give it a good stir and let it simmer until warm and creamy. Taste for seasoning and add as needed for your batch size. Serve as-is or over pasta/rice for a full meal! I love a piece of toasted sourdough and some chicken or steak with mine.

This is perfect for using up leftover produce before it goes bad AND sneaking in extra protein for you (and your kids).
Because let’s be honest… we’re not wasting groceries in this economy.
